螺螄粉好吃,湯底是關鍵,教你秘制湯底,詳細配方和步驟分享

老「食」說:螺螄粉,螺螄粉是廣西柳州的名小吃,風味獨特,深得大家的喜歡。

螺螄粉具有酸,辣,鮮,爽的特點,尤其是冬天的早上,來上一碗,特別帶勁。

米粉能夠如此好吃,其關鍵是在湯底,如果自己會製作湯底,那麼,味道也

不會差。今天我們就來分享螺絲粉湯底秘制方法,配方和步驟告訴你,喜歡

的收藏起來。

食材:石螺適量,小米辣,干辣椒,酸筍

香料:八角,桂皮,香葉,茴香,白芷,乾薑,生薑,大蒜,高湯

調料:米酒,老抽,冰糖,蚝油,冰糖,腐乳,

螺螄粉的配菜:炸香的花生米,黃花菜,酸豆角,提前炸好的豆腐皮,

木耳絲,蔥油,生菜,干米粉

米粉提前用冷水浸泡2小時,不能用熱水泡,否則米粉會很軟,

口感就不好吃了。

製作第一步:首先需要準備新鮮的石螺,做螺螄粉一定要用石螺,否則味道會

不夠好。

把石螺放到清水裡清洗乾淨,多清洗幾次,5-6次為最好。



熱鍋燒油,油熱後把姜,蒜,用小火把姜蒜炒出香味。

姜蒜炒出香味後,把小米辣放入,用小火炒出紅油,炒出香味。

記住,不能用大火,否則不能炒出小米辣的味道,大概需要8分鐘

左右。

小米辣炒出香味後,把大料(八角,桂皮,香葉,茴香,白芷),酸筍放入,

繼續用小火,把大料,酸筍炒出香味來,大約需要3分鐘。

3分鐘後,把辣椒干放入,炒一分鐘

辣椒干炒出香味後,把螺絲放入,

加入米酒,老抽

翻炒出香味,大概需要5分鐘。

5分鐘後,加入準備好的腐乳,炒出香味。

腐乳炒出香味後,加適量的蚝油,

再把準備好的高湯倒入,

加入適量的冰糖提鮮。湯水煮開。

湯水煮開後,把它轉入到湯鍋,用中小火煲2個小時,

把食材中的味道都煲出來。

這就是螺螄粉湯汁的製作方法。

第二步:起鍋燒油,油熱後,把酸豆角放入,炒香炒熟。

加入適量的鹽,少許白砂糖調味,出鍋裝盤。

同樣的方法,把木耳也炒熟。

黃花菜炒熟,

螺螄湯底調好後,加適量的鹽調味,攪勻。

第三步:鍋中水燒開,水開後,把泡好的米粉放入燙

2-3分鐘。

3分鐘後,把米粉撈出放入大碗中,加入適量的蔥油拌勻。

把生菜放入開水中燙至斷生,撈出,放入米粉的碗中。

然後在米粉里放入所有的配菜。



這樣,一道酸辣爽口,香辣開胃的螺獅粉,就完成了。

味道非常贊,和外麵粉館一樣好吃。

老「食」物螺螄粉製作的要點:

1.選新鮮的石螺。

2.炒至的過程中,切記要用小火炒。

3.米粉提前用冷水浸泡2個小時。
