柳州正宗螺螄粉做法,酸臭香辣,第一口臭越吃越香,自製超簡單!

記得第一次吃是叫外賣,以為是放臭了還賣給人,給了老闆差評,對不住了,後來朋友告訴我就是那個味道,第二次吃的時候已經就莫名其妙的愛上了!



買過很多速食的螺絲粉,總結還是自己做味道更正宗些!

螺螄粉的做法:

材料

干米粉,酸筍1斤,石螺2斤,蘿蔔乾,炸腐竹,青菜, 辣椒油,八角,丁香,玫瑰露,姜1大塊,清湯5升,雞精,甘草3片,肉桂,干黃花菜

做法

1、先做湯:熱鍋,放姜和八角、丁香、肉桂、甘草和石螺一起炒。

2、炒1分鐘再放玫瑰露、鹽。

3、炒到田螺入味有七成熟,就放入清湯慢慢熬一個半小時。




4、待田螺味出來,再放入雞精,還有辣椒油,再煮十幾分鐘湯就做好了,

最後把黃花菜也放下去(吃一點放一點進去煮)。

5、下面開始炒酸筍,放油熱鍋後就可以倒入切好的的筍,

放鹽、一點辣椒粉、醬油、一點糖和雞精,炒到干水就可以了。

6、干蘿蔔也是切好,不用放油,炒干水就拿起來。

7、都準備好了後就可以用開水先燙一點青菜,放到一個大碗里,再燙用冷水泡了一個小時的干米粉。

8、碗里加上炸腐皮、酸筍、蘿蔔乾、香花生,還有黃花菜,用熬好的湯淋上去就可以了。
